Coke Zero works really well as a substitute for regular Coke in mixed drinks. Diet Coke plus whiskey created some terrible chemical flavors but that doesn’t happen with Coke Zero.
As far as bars go, I have only seen it carried at Buffalo Wild Wings. I wish more would add it to their soda guns.
